In a Pinch Hot Wing Seasoning



Today, I was so surprised to find that we were out of Texas Pete.  That is a hot sauce, for those of you from other parts of the country, that have never heard of it.  We use a lot of it in this area.  We had never ran out of it before!  Oh, the shame!

The wing sections are in the oven and what am I going to do?

Google search, here I come.  I found this hot sauce substitute for cooking.

1/3 cup vinegar
3 tablespoons water
2 tablespoons cayenne pepper
1 tablespoon salt

PepperScale says that this is a vinegary hot sauce and is meant for cooking not for dashing or condiment.

Preparing the wings:

I use Springer Mountain Farms regular not jumbo chicken wings.  We like this brand of chicken and the small wings are delicious!


  • Cut the fresh wings into sections, wash, put into large bowl and cover with water add white vinegar and place in fridge for at least an hour.
  • Remove wings, rinse and pat completely dry.
  • Season with Lawry's Seasoned Salt , all areas of chicken
  • Place wing sections on large baking sheet lined with crisper if you have one, do not let them touch.  You need room between each section for them to roast/bake well.

Coating for wings & Baking Instructions:

*Note* I had 24 wing sections, so I cut the PepperScale Hot Sauce Substitute in half.  

Preheat oven to 375 degrees 
Convection Roast works quicker and best but if you don't have that use regular bake in your oven.

  • Melt 2 tablespoons of real butter in microwave
  • Add butter to the hot sauce mixture (remember I used half hot sauce on 24 sections)
  • Add 1/2 teaspoon granulated garlic to hot sauce mixture
  • Mix well
  • Brush sauce over top of wings
  • Bake 30 minutes
  • Turn all wing sections over and coat with sauce
  • Bake 30 more minutes, or until cooked thoroughly
  • Remove from oven
  • Let wings rest for 5 minutes before serving
Serve with your favorite condiments and sides

We had Home Fries, seasoned with Lavender Sea Salt, fresh celery sticks and my homemade Ranch Dressing for condiment as our lunch sides today.  I made the ranch dressing without the pickle juice for more authentic ranch taste, and left it thicker for using as a dip.

You may like your wings hotter, but for us it was just fine today.

It may turn our differently than you think, but some of the best
recipes are found by accident.
