Cool Cucumber Salad



Who loves cucumbers?  I sure do and now they are coming off the vines in gardens around here!  There is a local grower who always has his first. We can't wait to see Mr. Plummer and his fresh grown vegetables.  This year he has some large, seedless cucumbers and some very sweet crisp onions fresh out of the ground. Did I mention he has some new potatoes that are out of this world?

Today is all about cucumber salad.  There are many recipes out there on the internet and most have basically the same ingredients as I use.  

It has been extremely hot around here lately, temps hovering around the hundreds and so early in the year too!  We are finding ways to stay cooler.  Let's have a cool salad.

These are the size of two regular cucumbers
They basically cover my large cutting board



CREAMY CUCUMBER SALAD


INGREDIENTS

2 extra large seedless or 4 regular sized fresh cucumbers
1 large sweet onion
1/2 - 1 cup sour cream
1/4 cup fresh Dill chopped
2 tablespoons white vinegar
Juice of 1 lemon
Salt to taste
Pinch of sugar optional


DIRECTIONS

Wash and dry cucumbers
You may peel them or not, your choice
Slice them into 1/4 inch slices
Place in medium bowl
Peel and cut onion into cut into 1/4 inch slices
Separate and place into bowl with cucumbers

Chop Dill and add to bowl

Take clean hands and toss the cucumbers, onion and dill to mix well.


SAUCE

Add the following to a small bowl to mix:
1/2 cup sour cream  **Start with that measurement add more if needed
Juice the lemon 
Vinegar 
Whisk or stir to mix thoroughly
Season with salt, black pepper and sugar if desired.

Add Sauce to cucumber mixture coating all well.  Taste add more seasonings if you wish.
Chill for at least a couple of hours.  Serve cold.

Makes  6- 8 servings


We've had some pretty hot days here lately and this salad was a welcomed cool addition to our dinner menu!
