One Pound Loaf Bread Made In The Zojirushi Mini Breadmaker

 

Do you love the smell of fresh bread baking?  Oh my goodness I do!  Today I'm sharing a small breadmaker bread that I've adapted from a King Arthur recipe.  I like their white sandwich bread recipe but this week I've added some  King Arthur Whole Wheat flour to the mixture and I love this light-textured wheat bread! 

Sharing the recipe that I tweaked slightly by adding half whole wheat to half all-purpose flour to the mixture.  Recipe and links in the post.


King Arthur's Sandwich Bread for the Mini Zo Bread Machine

My Whole Wheat Blend Sandwich Bread Adaptation 

Ingredients

2/3 cup lukewarm water

1/4 cup lukewarm milk

2 tablespoons vegetable oil or 2 tablespoons butter (I used butter)

1 1/4 cups all-purpose flour  (actually it was Gold Metal I used what I had on hand)

1 1/4 cups Whole Wheat flour 

1 1/4 teaspoons salt

1 tablespoon + 2 teaspoons sugar

1 teaspoon instant yeast (I used Fleischmann's Instant Dry Yeast. You have to use Instant yeast in this recipe)


Directions

Sift flours for a lighter texture. Don't sift if you want a more rustic and dense bread. 

Measure flours by spooning lightly into measuring cups.

I do not recommend using whole wheat flour completely in this recipe. I made a loaf and it was too dry for my taste.

I used warmed filtered water and cold milk directly from the refrigerator.  Warm in microwave to lukewarm. (I put both in a glass one cup measuring cup then microwaved for 45 seconds at 50% power) Stir with a butter knife and then drop/check on the inside of your wrist. 

You must check because microwave wattages differ. This worked well for me each time. For use in the breadmaker, you don't want it to be cold or warm/hot.  We don't want to kill the yeast. Lukewarm works best I've found.

Place all of your ingredients into the bread machine bake on the Basic Bread setting *see video below if you are unfamiliar with this.

Bake then carefully remove from the breadmaker to cooling rack to cool completely before wrapping or bagging.


Bread Machine Setting:

I baked mine on Basic Bread setting on regular and then regular on crust control The time it takes to rest, knead, and bake is 3:40.  Not bad timing when all you have to do is add the ingredients into the machine and it does almost all of the work.




I'm really enjoying this little bread maker.  It is a ZOJIRUSHI  BB-HAC10.  

I've had it for quite a few years but you can still purchase one if you would like on their site here.   It is quite expensive there the price is $229.99.  Amazon has the same model here for $172.40 which is where I purchased mine about 4 years ago.  

When I first bought mine I did make a few loaves of bread but didn't really utilize it a lot. This week I've been baking up a storm and have made 6 loaves in just a few days.  They've been really good too!

Of course, I love the handmade bread done entirely by hand it is wonderful but this is a great substitute when you have little time to make it all handmade.  With this machine, all you do is add the ingredients check the time let it do the work!  

I don't claim to be a bread machine expert but sharing what is working for me at this time.

It even makes jam!  

I've not tried that yet!
