I have to say that I have been very blessed with
having two of the most loving mother in laws
in my lifetime.
Genolia's Fried Cornbread Recipe

Make about three pan sized lace cornbreads, in iron frying pan if possible.
Preheat oven to 375 degrees
Ingredients:
3 pan sized lace cornbreads--crumbled
1 small can or jar of mushrooms, or fresh if, handy chopped
1 small onion chopped very finely
4 sections of celery chopped very finely
(Saute onion and celery in small amount of butter until soft and translucent.)
2 boiled eggs/chopped
2 raw eggs beaten
Chicken broth or Turkey drippings whatever is handy
(amount will vary so make ahead or buy containers of broth,
amount will be determined by how moist you want your dressing)
Genolia made her dressing thick and spooned it into the pan
because she liked to slice her's.
1 small bag of Pepperidge Farm Herb Seasoned Stuffing
Add all of the ingredients together and mix thoroughly

Spoon into pan
Bake until golden brown
Cool, while finishing turkey and gravy
Slice into squares and serve with warm giblet gravy
Genolia always served rice with her Holiday meal too. She would rinse her rice and cook in a double boiler. It was always the fluffiest, whitest rice I had ever seen.
This little woman was such a wonderful cook.
