These are some of my favorite cookies. Chuck and I happen to love cashew nuts so on the rare occasion when we can stop eating them I make these cookies.
This cookie reminds me of a rich Sandie type and is delicious soft or crispy.
Ingredients
2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
3/4 cup firmly packed light brown sugar
1/2 cup sugar
1 cup butter softened
1 egg
1 teaspoon vanilla extract
1 1/2 cups chopped cashews
Directions
Preheat oven to 350 degrees
- In a large bowl combine all ingredients except cashews. Blend well with mixer.
- Stir in cashews, mix thoroughly.
- Drop by rounded teaspoon onto lightly greased cookie sheets.
- Bake for 10 to 12 minutes or until light golden brown.
- Cool a minute or so, then carefully remove to a rack to finish cooling
- Store in a cookie jar and enjoy!
Makes approximately 45 one inch cookies

These look fantastic, Dolly! We love cashews, too. Matter of fact, cashews and peanuts are the only nuts John will eat. Claims he doesn't like nuts....lol Saving this recipe. Hope you are staying safe! xo Diana

I don't make these often but when I do they just don't last long around here! We love the cashews too! Have a great rest of the weekend. We are safe haven't left home in so long I don't know which direction to gowhen we do! LOL....Y'all stay safe and praying for this mess to end soon.
