Fresh Blueberry Cobbler


It's blueberry picking time around here!  Who loves blueberries?  We do!  Whether eating them by the handfuls or baking them into delicious muffins, or pies.  Today I made a fresh blueberry cobbler and let me tell you it is delicious! 

This recipe is extremely simple to make yet so rich and delicious!  Add some vanilla ice cream or fresh whipped topping and you're in for a treat!



Ingredients and Directions:

Preheat oven to 325 degrees

2 cups blueberries

Syrup
Place the following ingredients into a small sauce pot.
Whisk over medium heat, heat to boiling, whisking to prevent lumps
Cook at least one minute, up to two to thicken slightly
Remove from heat for one minute.
Pour over blueberries gently stir to coat, and set aside, briefly.

3/4 cup water
3/4 cup white sugar
1 Tablespoon honey
1/2 teaspoon lemon juice

Melt butter in baking dish. 

Mix flour, sugar, milk, and cream in medium bowl whisking to mix and remove lumps.
Pour batter over melted butter in baking pan. 
Add blueberries with syrup evenly over batter in pan.

Batter
1 cup self rising flour
1 cup sugar
3/4 cup whole milk
1/4 cup heavy cream
1 stick (1/2 cup) butter

Bake 30-45 minutes until golden brown.  

Serves 6-8
