EGGPLANTS

I have found there is something that likes to grow in this sandy soil. Well something else along with the sandspurs. That is Eggplant. Dixie Lee Peas like it pretty well also. It has been so dry this season that the beans and peas have not done as good as usual.




These were just picked today and they were surrounded by sandspurs and grass. I was amazed to walk out and see these. I have cooked several Eggplant Parmesan dishes and they were pretty good. I think I will now make Moussaka. Does anyone have any recipes containing eggplant? I need new recipes to use all of these. I find that most people that live around here do not care much for eggplant, or that is what they tell me when offered any.

Followup: A friend of mine told me that it is wonderful roasted in the oven with some other veggies like squash and chunks of sweet potatoes or grilled on the grill. I will have to try that.
Another friend told me to batter it up and fry it. I will try that also.

I have to say though I would have to say those ladies that fix this at the Greek Festivals in Florence have me beat by a mile

  1. I do have a great recipe for eggplant. Roasted Eggplant Lasagna is a late summer favorite here at 1840 Farm. It is rich and delicious and will please even those who don't usually enjoy eggplant.

    I have copied the recipe and will definitely try it. Living with an Italian and me being Southern I have found out one thing. That is I had better love a tomato sauce lol so thanks for recipe!
