Looking for an easy coconut pie? This is one that I posted over six years ago on my cooking website. It never fails and I've yet to meet anyone that likes coconut that doesn't like this pie. My mama always made these and we could almost sit down with one in hand and eat the entire thing.

Preheat Oven 400 degrees
Bake pie crust until very lightly browned
Remove from oven to cool
Turn oven down to 350 degrees
INGREDIENTS
4 large eggs
1 stick butter melted
1 cup sugar
1/2 cup buttermilk
1/2 cup coconut (you may use a little more if you love coconut like we do)
1 tsp. real vanilla
Deep dish pie shell
DIRECTIONS
In small bowl beat eggs with a fork or whisk, set aside
Melt butter
Add sugar and melted butter to medium bowl, mix/whisk well
Add beaten eggs, buttermilk and vanilla, mix well.
Stir in coconut mixing well.
Pour into pie shell or shells
Bake 30 minutes or until lightly browned.
Cool on wire rack and refrigerate until eating
Serves 6 - 8
*Note* You can see that today's pie I forgot about and browned too much! Normally you wouldn't want it to be that dark. See picture below for light browning that makes for a great pie!

Handwritten
I would take nothing for this
Knowing how much this means to me I need to get busy with my own handwritten recipes. My children want our most favorite recipes handwritten in a book and I've been slack. I will make a point to get it done!
Perhaps you would like to do that for your own family members. It would mean so much more than a recipe typed up. I love this and can remember my mama sitting down at the table writing them up for all of us. You can't take away the love that was put into it.
I enjoyed having these guys with me today and what fun it was.
Oh, how I love them!
