Simple Cream of Potato Soup



This is a pure potato with cream soup.  I've made potato soup for years and have added bacon fat among other ingredients.  Today's recipe is simple no bacon fat only potatoes, water, cream, and oh-so-delicious!
Chuck had to have some dental work so I had to come up with something good and filling for him to eat that wouldn't cause any damage to his mouth. 
This virtually spur-of-the-moment soup fits the need and is surprisingly excellent.  I will make it again.

This soup is fairly light the only thing besides the potato that is in any way heavy is the heavy cream and which is used sparingly.

Ingredients

4 large potatoes
1 small onion or half large
Water
Heavy Whipping Cream
Salt & Pepper
Dill
Parsley

Instructions

Wash, peel and cut potatoes and onions into cubes
Cover generously with water
Cook until fork tender

For Each Serving
  or for full pot measure and fix accordingly

Ladle 1 cup of potatoes from the pot into a deep mixing bowl
Add 1/2 cup whipping cream into the potatoes in a mixing bowl
Using a stick hand blender or hand mixer, blend until smooth and thickened.
Season with salt and pepper to taste.
Ladle into an individual soup bowl
Top with Dill and Parsley dry or fresh chopped

Serve immediately
Delicious and Filling!

    1. I guess I should have called it cream of potato but it was pretty good. I love dill in a lot of things.
