Old Fashioned Baked Macaroni & Cheese



Who doesn't like macaroni and cheese?  I frankly don't know anyone that doesn't.  It has become such a staple on our family tables over the generations until, sadly, we take it for granted.  The grandparents on down in the family have always made their favorites.  The kids when little wanted the infamous blue box macaroni dishes.  I've made the soft cheese sauce macaroni, but always come back to my old fashioned baked.  Today bringing back my recipe for that.  I hope you enjoy it.



Ingredients

8 oz. macaroni noodles
1 lb sharp cheddar cheese, grated
1 large egg
1 3/4 cups of whole milk
1/2 tsp. dry mustard (optional)
3/4 tsp salt
1/2 tsp. black pepper
Paprika (optional)
2-3 Tbs. butter

Directions

Preheat oven to 375 degrees F

Cook macaroni according to package directions to Al Dente, drain, and set aside.

Add the following to a medium bowl:
Egg beat well, then add milk, dry mustard, salt, and black pepper, whisk well

Put casserole/baking dish into the oven just to melt the butter, remove

Scatter some grated cheese loosely over the bottom of baking dish
Spoon some noodles over cheese
Top with more cheese
Continue with layering as long as you can, the last layer of course being cheese. 

Whisk once more and pour egg/milk mixture evenly over the top of casserole
Milk egg mixture should come at least to the top of the macaroni, even if it doesn't cover it.

Sprinkle top with Paprika if desired, makes for beautiful browning.

Bake 30 - 45 minutes
Serves 8 - 10 people

Tip*
You can check for doneness by inserting a butter knife on the edge of the dish.  Push in slightly and check to see if milk mixture has cooked into the noodles or is still a liquid.  If still liquid bake a short while longer check again.  It should look very moist, but not runny.  Also you don't want to overcook and dry out your dish.
