SPEEDY YEAST ROLLS
Ingredients
4 & 1/2 cups all-purpose flour, divided
3 tablespoons sugar
1/2 teaspoon baking soda
1 teaspoon salt
2 packages dry yeast
1 1/4 cups buttermilk
1/2 cup water
1/2 cup butter
melted butter for brushing tops
Instructions
- Combine 1 1/2 cups flour, sugar, baking soda, salt & yeast in a large mixing bowl; set aside.
- Combine buttermilk, water and 1/2 cup butter in small saucepan; heat to 120 -130 degrees or do in microwave: melt butter, heat buttermilk with water test temp for at least 115 degrees.
- Stir well and add to the partial flour mixture.
- Beat at medium speed of mixer for 4 min.
- Turn dough out onto a floured surface, or use the dough paddle of your mixer
- Knead until smooth and elastic, about 5 to 8 minutes. Adding flour if dough is sticky and needed.
- Place dough ball in a greased bowl, turning to grease the top
- Cover and let rise in a warm place free from drafts 30 minutes or until doubled.
- Punch dough down, and shape into 1 1/2 in. balls.
- Place on greased cookie sheets

Bake 375 degrees for 15 to 20 minutes. Brush with melted butter.
Yield about 2 dozen
