SPEEDY YEAST ROLLS

SPEEDY YEAST ROLLS


Ingredients

4 & 1/2 cups all-purpose flour, divided

3 tablespoons sugar

1/2 teaspoon baking soda

1 teaspoon salt

2 packages dry yeast

1 1/4 cups buttermilk

1/2 cup water

1/2 cup butter

melted butter for brushing tops


Instructions

  1. Combine 1 1/2 cups flour, sugar, baking soda, salt & yeast in a large mixing bowl; set aside.
  2. Combine buttermilk, water and 1/2 cup butter in small saucepan; heat to 120 -130 degrees or do in microwave: melt butter, heat buttermilk with water test temp for at least 115 degrees. 
  3. Stir well and add to the partial flour mixture.
  4.  Beat at medium speed of mixer for 4 min.
  5. Turn dough out onto a floured surface, or use the dough paddle of your mixer
  6. Knead until smooth and elastic, about 5 to 8 minutes.  Adding flour if dough is sticky and needed.
  7. Place dough ball in a greased bowl, turning to grease the top
  8. Cover and let rise in a warm place free from drafts 30 minutes or until doubled.
  9. Punch dough down, and shape into 1 1/2 in. balls.  
  10. Place on greased cookie sheets
  11. Cover and let rise in a warm place free from drafts 30 minutes or until doubled in bulk.

Bake 375 degrees for 15 to 20 minutes.  Brush with melted butter.

Yield about 2 dozen
