Salmon Croquettes sometimes called Salmon Patties
This wonderful Southern Recipe is made from canned salmon and is one of our family recipes passed down through the generations. Great for a quick inexpensive main course any day of the week
RECIPE
SALMON CROQUETTES
Ingredients
1 can of salmon undrained
1 beaten egg
1/4 cup finely chopped onion
12 to 14 saltine crackers
Dill Weed--McCormick's dash or two *
lemon pepper dash or two
1 tablespoon oil of your choice
* you may use fresh dill if you wish*
Directions
Open the salmon can then pour the entire contents liquid into a mixing bowl,
Take a fork to remove the black skin and the little bones inside.
*The bones won't hurt, but I remove them because I don't like them in mine.*
Crumble the saltines finely & add to bowl
Add the beaten egg
Add the finely chopped onion
Add seasonings
Mix together gently with a fork
Note- After mixing if your croquettes have too much liquid add more crushed crackers.
The salmon mixture needs to be worked with your hands a little. It will not hold together tightly, take a bit in the palm of your hand, shape it, and pat gently.
Heat oil in a frying pan over medium-high heat
Place in pan. This is the hard part. Do not touch; be patient until you see the edges beginning to brown. Then, gently turn over and brown the other side.
I can not stress this enough be gentle or they will fall apart. Very little oil is needed especially if using a nonstick pan for easier turning and pretty browning. If using a stainless steel pan you may need to add more oil.
Makes 5 - 7 Patties
Serve warm they are quick, easy, and delicious! Perfect for a busy weeknight. Menu Idea serve with homemade creamed potatoes and sweet peas.
