Ambrosia

I love good oranges.  Do you?  You can't beat the taste and I love ambrosia so I thought I'd share one of our family's favorite fruit salads.
Directions:
A Special Note ~ Find the best tasting navel oranges you can buy.  That will make the Ambrosia Salad
  •  9 Navel Oranges peeled, and sectioned cutting inside tough membrane using only internal orange sections.
  • **Cut oranges as in this picture, all around. This makes it easier to get to the orange sections. You want to take all of the white off anyway.**


  • ¼ to ½ cup honey to taste. (I use 1/4 cup 
  • 1 to 2 teaspoons almond extract 
  • 2 cans crushed, tidbits or chunks pineapple drained  
  • Combine and chill for at least 8 hours 
  • Add ½ cup flaked coconut if desired 
  • Put into pretty compotes and top each with a cherry 
  • Yields 6 to 8 servings
