I really like asparagus, cooked in any way. I love it steamed, broiled seasoned with salt and pepper drizzle a great olive oil or put in a casserole. Today another casserole.
Ingredients
1 pound small fresh asparagus
1 can cream of chicken soup
1/3 cup whole milk
1/4 - 1/2 pound white sharp Cheddar cheese
1/3 cup grated fresh Parmesan cheese
1 cup homemade bread crumbs
Olive oil for drizzling over the top of the bread crumbs
Salt and pepper for seasoning
Directions
Break tough ends from asparagus, wash/rinse thoroughly and drain asparagus
Using medium casserole baking dish:
Layer half of the asparagus, salt and pepper
Spoon the cream of chicken soup over that layer
Layer other half of asparagus, salt and pepper
Add very thin sliced cheese to just cover top of this layer
Add Parmesan over the top of that cheese
Top with finely grated bread crumbs **see note**
Drizzle all over bread crumb topping in all directions
Bake in preheated 350 degree oven for 20 minutes
Pour whole milk around the outer edge of the casserole dish
Turn up heat to 400 degrees F and bake until bubbly on edges and in middle.
Remove from oven to cool 8 - 10 minutes
**Note** This is best used with homemade yeast bread. I sometimes bake a loaf of bread and after the second day or so if not eaten will pop into the food processor and chop finely. Freeze and use only what you need and pop back into freezer.

I have used Kerrygold Ballyshannon
Both are delicious!
If you know me you know I love everything Fratelli Carli and this cheese is out of this world delicious!
I grated my own and topped the dish with this.
This is the pure olive oil and is wonderful in cooking. They make an extra virgin that is out of this world for dressings and such.

I did break down and put canned soup in this dish
Recently I've cooked so much for my mother in law who has Alzheimer's Disease.
This was an easy substitute for making my own
