Lemon Buttercream Frosting


I really love lemon anything.  Do you?  Make your favorite cake recipe and then top it off with this delicious although not so lite frosting!

The white icing/frostings are very easy to make and almost foolproof.  All you need to do is have lots of Confectioner Sugar some type of liquid and flavorings on hand to make.  A great stand or hand mixer is an added plus.  You can whip them up by hand but that is much harder to do.

Lemon Buttercream Frosting

Ingredients

1 Lb. confectioners sugar  10 X sifted Plus a little extra if needed for texture.
1/2 cup shortening
1/2 cup butter
Juice and zest of 1 lemon
1/2 tsp. butter flavoring

Optional:  If needed for extra flavor 1/2 tsp. lemon extract and yellow food coloring if you wish.
*Additional lemon juice, milk or water if frosting is too dry.

Directions

Using a stand mixer:
Mix shortening and butter together until soft and fluffy. Add sugar a little at a time mixing slowly until blended in. Add lemon zest, and juice a little at a time to get the consistency you desire.  Taste and adjust ingredients as needed for flavor and consistency.

Frost cake of your choice
Frosting can be stored in the refrigerator for up to 3 days or you can freeze for up to 6 weeks.


Variations:
You can use all butter instead of the shortening, but look for a softer frosting that will not be as stiff and hold up as well.  It will be a little more fragile.  I suggest the shortening for a decorator buttercream.

You can make Regular Buttercream Frosting using different flavorings such as Clear Vanilla and Almond Flavorings.

  1. Oh- I LOVE lemon anything!!!! I had a piece of Lemon Meringue pie the other day at Perkins..and I will say that for a commercial pie it was GOOD. Your icing sounds delicious. xo Diana
