Hearty Potato Soup is a complete meal with only a few simple ingredients
Ingredients
6 medium yellow potatoes peeled and chopped into 1/2-inch cubes
6 cups chicken broth Or 6 cups water with 6 teaspoons powdered chicken bouillion
1/8 cup finely chopped onion
2 Tablespoons finely chopped celery
1 cup heavy cream
Black pepper and salt if needed. **note if you are using purchased bouillion powder or base then do not add salt at all until you finish cooking. Taste to see if any is needed.
Directions
Cook potatoes celery and onion in the broth or prepared bouillon broth. Bring to a boil
lower the heat and cook until potatoes are fork-tender. Carefully use an immersion blender and
blend/chop up all or most potatoes. Add the heavy cream. Raise the heat to warm the soup then lower the heat just to keep the soup warm. Taste to see if you need to add any seasonings.
ladle up and eat while warm
The soup is delicious all by itself but you may if you choose to serve it with homemade croutons chopped bacon, fresh herbs, and grated cheese. A loaf of crusty bread is a great addition as well.
