Quick Delicious Yeast Rolls



This is one of my favorite yeast roll recipes. I made them by hand for over 30 years. This was before bread machines were ever used.  

I was tired and a little bit lazy so I decided to cut the recipe in half to make it in my mini breadmaker.  This is the original recipe I had cut down to half and made in the machine.

It now makes a dozen fast and easy yeast rolls! Within two hours you can be sitting down to warm soft delicious rolls.


We have a Zojirushi Mini Breadmaker and I really like it! It is easy to store when not in use.  The only trouble I find is some full-sized recipes can't be made in it. So, I'm learning to reduce the recipes to fit the machine.

It does well with this recipe.  The rolls are extremely delicious!  We ate our test rolls with butter of course. 

A quick and easy way to make wonderful tender yeast rolls for dinner!  Why not let the bread machine do the hard work?  You can let it mix, knead, and rise.  You will then remove the dough shape into rolls.  Let them rise in a warm draft free location, and bake in your oven.

Excellent on a very busy day! 


FAST & EASY   YEAST ROLL RECIPE:  For The Bread machine

INGREDIENTS

2 1/4 cups all-purpose flour

1 1/2 tablespoons sugar

1/4 teaspoon baking soda

1/2 teaspoon salt

2 1/4 teaspoons instant yeast

1/2 cup plus 1/8 cup buttermilk 

1/4 cup water

1/4 cup butter

Plus extra butter melted for brushing the tops of the rolls after baking


*My note: one stick of butter is 1/2 cup of butter so cut a stick in half for this recipe. Use half in the saucepot melted with the liquid ingredients and the other half melted to brush the tops of the rolls after baking*


DIRECTIONS

Measure out dry ingredients into small bowls

Combine buttermilk, water, and 1/2 stick butter in a small saucepan

Heat on medium watching to melt butter and stirring. 

Check the temperature you will want it to be 120 to 130 degrees F. 

Make sure it is not hotter because it could kill your yeast!

Put the liquid ingredients into the bottom of the bread machine

Add flour 

Make a small well in the center of the flour, put yeast into the well

Add sugar, baking soda, and salt around the well

Put the breadmaker on the Dough Cycle and let it go to work

When finished kneading and rising then remove the dough

Place on a lightly floured surface and shape it into a rectangle

Cut into 12 equal portions, roll each into a ball about 1 1/2 inch in size

Place onto parchment-lined baking sheet

Place in a warm spot to proof for 30 to 50 minutes or doubled in size

Yield 12 Rolls


Preheat oven to 400 degrees F

Bake 15-20 minutes until done

Remove from the oven

Melt 1/2 stick of butter and immediately brush the tops of the rolls. Do Not Skip This Step, it softens the rolls.
