Quick Pizza Sauce



Do you make your own?  I admit the fact that most of the time I buy it. (hanging my head in shame).  I married into the Italian family, not born with it.  I do try to cook like it with a Southern touch that is. It is sad most of the true Italian relatives have long since passed away.  Could you imagine the recipes that could be had?  

Reminds me I need to get back to the Ancestry research.  I've found some interesting things in all family trees.  I went off topic again.  Today if you are rushed and just want a simple sauce to top your pizza with.  I'm sharing this one.



I guess you could say that mine yesterday was semi-homemade, because I used canned tomatoes and purchased dried oregano.  You can use all fresh from tomatoes on down or some of your home canned tomatoes (I had some but had to use some of the canned before expiration date ends).


EASY PIZZA SAUCE

Ingredients

1 ~ 28 oz. can crushed tomatoes (Cento)
2 cloves fresh Organic garlic crushed and chopped finely
1/3 cup chopped onion
1 - 2 Tablespoons pure olive oil (which can take higher heat than extra virgin)
1/4-1/2 teaspoon of dried oregano (add to your taste, the amount you like)
Fresh Basil Leaves I used quite a lot because I grow it indoors in the Aerogarden. You use to your liking, and dried can of course be added as well.
Optional ~ 1/4 -1/2 teaspoon of honey, sugar, or brown sugar can also be added if your tomatoes are extremely bitter. (that tends to happen with processed canned tomatoes). Homemade tomatoes rarely need sweetening.
Quick squirt of lemon juice
Salt, black pepper and red pepper flakes added as well.


Directions

Add olive oil to pan on medium heat
Add a pinch or two of red pepper flakes
Saute garlic and onion slightly to translucent 
Add oregano, pinch of salt and black pepper
*If using dried Basil add now as well.  Fresh will be added towards end of cooking time.
Add tomatoes
Stir & bring to a boil
Reduce heat to medium low and cover
Check often stirring
Simmer 22 minutes
Add fresh Basil leaves
Cover and cook another 8 minutes
Turn off burner and let it sit a few minutes to cool slightly

**Important note: Taste and add more seasonings for your desired taste! Simmer a little longer if you add and there you have it!
***Remember to slightly season each layer with salt and pepper for best flavor.

Make your pizza and enjoy



Alright, even I admit that I was heavy handed with the cheese on this one!

  1. Hi, Dolly!! Seriously, i just ordered specialty flour to make homemade pizza and calzone... I recently ran out of of my frozen homegrown tomatoes and tomato sauce I canned a year back. This year, I plan to preserve and can more. I use the the same cento brand of tomatoes... Happy New Year! Also your recipe for sauce I will try it..

      I want to order some of that flour too! I've made the pizza crust before and they were very good but, I'll bet that would only make it better.

  2. I ordered the perfect pizza blend from King Arthur Flour... I have used before and WONDERFUL... makes a light crispy crust...... i also purchased some pumpernickel flour .. my next blog will be on using this flour on a rye/pumpernickel
    bread recipe .. your sauce recipe is on POINT!

      I love the King Arthur Recipe for pizza crust. It is really good, but when pushed for time I grab those Stonefire NAAN breads and just top them. I love you too sweet sister xoxo Dolly
