Oven Braised Short Ribs in Rich Gravy



I can remember grocery shopping with mama when younger.  I would always ask why she bought that bone with a little bit of meat on it.  She would say "That gives the dish flavor, it tastes so good." She was right you know.  She would add it to her beef stew, soups, stocks and it was delicious. She was an excellent cook and made some of the best gravies in the world.

When you see the short ribs on sale, stock up on them because they can be quite expensive if not.  

Today I share one of my creations, give it a try I think you'll enjoy!



The butchers cut these in several different ways now, but I prefer the cut shown above in the photo, for this particular recipe.  

I don't know your family's appetites so you decide how many your will need.  We treat this as a delicacy here so not a large amount is needed.

This recipe takes only a few simple ingredients so it is relatively inexpensive to make.


Ingredients

Beef Short Ribs 8-10 (I used for this recipe)
Salt
Pepper
Flour, enough to coat meat
Olive Oil
Bacon 2 slices chopped small and fried crisp
Garlic 2 cloves minced
Onion 1 very small chopped finely or 1/3 to 1/2 cup
Tone Beef Base 2 teaspoons *
2 cups water *

Substitution:*Instead of Beef Base and water you could substitute Beef Broth or Stock *


Preheat oven to 350 degrees

Instructions
  • Fry the bacon in an oven proof pan/pot until crisp, remove from grease.
  • Heat water in microwave 1 minute, add beef base stirring, then heat an additional minute more.
  • Wash ribs, dry, sprinkle salt and pepper to all sides and coat in flour. 
  • Add olive oil to bacon grease in pan to coat the bottom of the pan.  
  • Brown all sides of ribs adding garlic to pan while browning.  
  • When they have browned add the chopped onions, bacon and about 3 Tbs. of the flour used in coating
  • Almost (key word) cover ribs with the beef broth, reserving if any left for use later.
  • Heat until bubbly and thickened a little, stirring well, adding more broth if needed. Gravy will thicken with baking, so if it is a little thin don't worry about it.
  • Cover and place in preheated 350 degree oven.
  • Bake for 2 1/2 to 3 hours or until fork tender. I like to remove cover for 15-20 minutes at the end of baking time to brown the beef some. 
  • Carefully taste gravy to see if you need to add more salt or pepper. Broths, stock, can be very salty so don't add extra unless needed. 
  • Remove from oven and let rest for 15 minutes.


Serves 4-5







Serve with your favorite sides.  We love homemade creamed mashed potatoes and fresh green beans or crisp salad. It will melt in your mouth with such wonderful flavor.
