Simple Pound Cake


We love pound cakes around here and they can't be beat if you are using fresh eggs gathered daily from the hens.  The deep rich yellow yolks make the prettiest cakes for sure! 

This recipe is so old my card is stained but is still loved.  A family friend gave it to me many years ago. I call it our Carnation Milk Pound Cake.

It has a softer texture than our best-loved Sour Cream Pound but is still very delicious!  Add lemon flavoring along with the vanilla and it will bring back old-time memories at grandmas' I'll bet!
 


INGREDIENTS
1/2 cup Crisco shortening
2 sticks butter, softened
3 cups sugar
5 eggs
3 cups plain all-purpose flour
1/4 tsp baking powder
1/4 tsp salt
1 cup Carnation evaporated milk
1 tsp vanilla flavoring
1 tsp lemon flavoring (optional)

DIRECTIONS

Set out to warm and soften at room temperature the butter and eggs. You can even do this overnight if you wish.

Preheat oven to 325 degrees F

Grease angel food or bundt pan well with Crisco shortening.  Cover the pan and tube with flour to prevent sticking.

Beat Crisco and butter until soft and fluffy.  Add sugar beating until mixed well.  Add eggs, one at a time, beating to mix.

Measure and sift or whisk together the flour salt and baking powder.

Add about half the flour beating on low until mixed then add half of the Carnation milk beating on low to mix.  Add other half flour and then the rest of the milk.  Mix on medium for a minute or so.

Add flavorings mix in.

Pour or spoon into the pan take a knife and swirl all around into the batter to remove air bubbles.

Bake for 1 to 1 1/2 hours or until a toothpick or cake tester comes out clean

Remove and cool on a rack in the pan for 12 minutes.  Take a flat spatula and go all around the outside of the cake in the pan. With a small flat spatula carefully go around the tube to loosen the middle of the cake. Gently turn the pan over onto a cooling rack to remove the cake. Cool completely.

Slice serve and enjoy
Approximately 16 or more servings depending on how large you slice.
