Garlic Potatoes

I like potatoes, garlic, and onions.  Do you?  This is a delicious side dish for any entree and so easy to prepare. Leaves you time to do other fun things while they bake.

A few simple ingredients and a good baking dish are all you need.

Garlic Potatoes


4 huge baking potatoes chopped into 1 inch cubes
1 small yellow onion chopped (optional)
4 cloves minced garlic
3 Tbs pure olive oil
1 1/2 - 2 tsp salt
Fresh cracked black pepper
Top with paprika for beautiful color
2 Tbs parsley


In a gallon storage bag or large bowl mix all of the ingredients.  Toss or stir to coat the potatoes evenly.
Place potatoes in baking dish covered with foil, spreading out to bake.

Bake at 425 F degrees 400F degrees for glass dish
Bake approximately 30 minutes or until just fork tender.  You want them soft but not mushy.  Check after 15 minutes turning to cook the other side.  Finish cooking until desired tenderness removing foil early to brown.  If they are tender and not as brown as you like put the broiler on oven door open while watching. Remove and cool slightly.  Serve immediately,
