Easy Spanish Rice

Are you tired hungry and do you want something quick, inexpensive and fairly easy to fix?  

This is a recipe I threw together recently.  It smelled so good cooking and was very flavorful!  

Experienced cooks, as well as Beginner cooks on the stove or with experience cooking with pressure pots, can fix this.  

Add a salad or vegetable of your choice and your meal is ready!

Enough talking let's get to the recipe now!

I made this in the Instant Pot 

You can just as easily make it on the stove. With one exception double the water to rice measurement when making on top of the stove.

Ingredients

4 thick boneless pork chops cut into 1-inch cubes

1 pkg Mahatma Spicy Yellow Rice 5 oz. (be sure to get the Spicy version)

White rice just enough to make up 1 cup on top of yellow rice

1 1/2 cups water

1 yellow bell pepper chopped

1 LG. scallion chopped

1 Can Undrained hunts stewed tomatoes 14.5 oz.

Dash of Lawry's seasoned salt

Chili Powder 1/2 tsp

Vegetable oil about 2 tablespoons

InstantPot

* I like to use cubed boneless pork chops from time to time.  They are especially tender.


Directions

Saute pork in oil until browned well sprinkling with seasoned salt

Remove pork when golden brown

Saute onion and bell pepper until soft

Remove and set aside to use later in the recipe

Put the pork back into the Instant Pot 

Add the water 

Seal  and cook under pressure 

Cook the meat for 15 minutes

Cool Down, carefully release pressure

Measure the liquid the pork was cooked in:  You need 1 cup total * (take away all other broth it will not be needed, if you need more liquid to make the 1 cup add water to broth)*

Add the stewed tomatoes *(remember do not drain Use tomatoes and liquid)* the rice seasoned salt, pepper, and onions to the InstantPot

Seal 

Cook on the Rice Cycle  or Manual for 10 minutes under pressure

Cool down and after 10 minutes carefully release pressure

Remove pressure lid

Cover with the non-pressure lid and keep warm until serving within 20 minutes

Makes 4 large servings
